1 lb (450 g) beef chuck, cut into small cubes
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 carrot, diced
1 tablespoon tomato paste
1 cup Guinness stout
½ cup beef broth
1 teaspoon Worcestershire sauce
1 teaspoon fresh thyme (or ½ teaspoon dried)
1 teaspoon fresh rosemary (optional)
Salt and black pepper to taste
1 tablespoon flour (to thicken)
For the Pastry:
2 sheets puff pastry, thawed
1 egg, beaten (for egg wash)

Step 1: Cook the Filling
Heat olive oil in a pan over medium heat. Add beef and brown on all sides. Remove and set aside.
In the same pan, sauté onion, garlic, and carrot until softened. Stir in tomato paste and cook for 1 minute.
Return beef to the pan, sprinkle flour, and stir well. Pour in Guinness and beef broth. Add Worcestershire sauce and herbs.
Simmer on low heat for 30–40 minutes until thick and rich. Let the filling cool completely.
Step 2: Prepare the Pastry
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Roll out puff pastry and cut into circles or squares (about 4–5 inches wide).
Step 3: Assemble the Hand Pies
Place a spoonful of filling in the center of each piece.
Fold over and seal edges with a fork. Cut small slits on top for steam.
Brush with egg wash and sprinkle with optional toppings.
Step 4: Bake
Bake for 18–22 minutes until golden brown and crispy.
Let cool slightly before serving.
