Step 1: Prepare the Filling
Heat olive oil in a pan over medium heat. Add beef and brown on all sides. Remove and set aside.
In the same pan, sauté onion until soft, then add garlic and cook for 1 minute. Stir in tomato paste, then pour in Guinness and beef broth.
Return beef to the pan. Add Worcestershire sauce, thyme, salt, and pepper. Simmer for 45–60 minutes until beef is tender.
Sprinkle in flour and stir until the mixture thickens into a rich gravy. Let cool completely.
Step 2: Make the Dough
In a bowl, mix flour and salt. Cut in cold butter until crumbly.
Add ice water gradually until dough forms. Divide into two discs, wrap, and chill for 30 minutes.
Step 3: Assemble the Hand Pies
Preheat oven to 375°F (190°C).
Roll out dough and cut into circles (about 5–6 inches). Place a spoonful of filling in the center of each.
Fold over to create a half-moon shape. Seal edges with a fork.
Mix egg with water and brush over each pie. Cut small slits on top.
Step 4: Bake
Place pies on a lined baking sheet and bake for 25–30 minutes until golden brown.
Cool slightly before serving.
