Step 1: Prepare the Cake
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a medium bowl, whisk together flour, baking powder, baking soda, salt, and spices.
In a large bowl, cream butter with granulated and brown sugar until fluffy. Beat in eggs one at a time, then add vanilla and pumpkin puree.
Gradually add dry ingredients alternately with buttermilk, mixing until smooth.
Divide batter evenly into prepared pans. Bake 30–35 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
Step 2: Make the Caramel Buttercream
In a large bowl, beat butter until smooth. Gradually add powdered sugar, mixing well.
Beat in caramel sauce and vanilla. Adjust consistency with heavy cream or milk as needed.
Step 3: Assemble the Cake
Level the cooled cake layers.
Spread a layer of caramel buttercream between the cake layers. Stack layers carefully.
Apply a crumb coat and chill 20 minutes.
Frost the cake fully with the remaining buttercream. Smooth with an offset spatula.
Step 4: Decorate
Drizzle extra caramel over the top.
Add mini candy pumpkins or Halloween sprinkles.
Optionally, use edible glitter for a festive shimmer.
