For the Chocolate Cake Base:

Step 1: Bake the Chocolate Cake

  1. Preheat oven to 350°F (175°C). Grease and line a 9-inch round cake pan.

  2. In a bowl, whisk flour, cocoa, baking powder, baking soda, and salt.

  3. In another bowl, cream butter and sugar until fluffy. Beat in eggs one at a time, then add vanilla.

  4. Alternate adding dry ingredients and milk until smooth.

  5. Pour batter into pan and bake 25–30 minutes or until a toothpick comes out clean. Cool completely.

Step 2: Prepare the Pumpkin Mousse

  1. In a large bowl, whip heavy cream with powdered sugar until soft peaks form.

  2. In another bowl, mix pumpkin puree with cinnamon, nutmeg, and vanilla.

  3. Gently fold the whipped cream into the pumpkin mixture.

  4. If using gelatin, dissolve and mix in to help mousse set.

Step 3: Assemble the Cake

  1. Slice the cake horizontally to create layers if desired.

  2. Spread pumpkin mousse evenly over the cake layers or on top of the whole cake.

  3. Chill in the refrigerator for at least 2–3 hours to set the mousse.

Step 4: Decorate

  1. Add chocolate shavings, candy eyes, or fondant pumpkins.
