Ingredients
2 cups almond flour
1/3 cup gluten-free flour
1/4 cup Greek yogurt (or non-dairy alternative)
3 tbsp maple syrup
3 tbsp brewed espresso (strong coffee)
3/4 tsp espresso powder
1 tsp vanilla extract
1 tsp room-temperature yogurt for frosting (optional cocoa nibs or coconut yogurt)
Unsweetened cocoa powder for dusting
Instructions
Preheat oven to 350°F (180°C) with parchment-lined baking sheet
In bowl, mix almond flour, gluten-free flour, yogurt, maple syrup, brewed espresso, espresso powder, and vanilla
Oil hands, form 13 dough balls (1.5 tbsp each) on baking sheet
Flatten dough into 2-inch rounds, 1 inch apart
Bake 18 minutes until golden and edges are firm
Cool 10 minutes on sheet, then 2 hours on rack
Combine 1/4 cup Greek yogurt, 1 tsp espresso shot, espresso powder, vanilla, and 1 tbsp syrup for frosting
Spread 1 tsp frosting per cookie
Dust lightly with unsweetened cocoa powder using sifter
Notes
Use room-temperature yogurt for smoother frosting consistency
Let dough rest 5 minutes before shaping to allow flavors to meld
Freeze shaped dough balls up to 3 months
For nut allergies: substitute oat flour for almond flour and coconut yogurt instead of Greek yogurt
Add cocoa nibs or chopped dark chocolate to the dough for extra texture
