Step 1: Preheat & Prep
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Step 2: Make the Cookie Dough
In a bowl, whisk together almond flour, oat flour, cocoa powder, baking soda, and salt.
In another bowl, beat eggs, honey (or maple syrup), vanilla, and melted coconut oil.
Gradually combine wet and dry ingredients until a smooth dough forms.
Step 3: Shape & Bake Cookies
Scoop 1–2 tablespoons of dough per cookie onto the prepared baking sheet. Flatten slightly.
Bake 10–12 minutes until edges are firm but centers remain soft. Cool completely on a wire rack.
Step 4: Prepare the Filling
In a small bowl, mix mascarpone (or Greek yogurt), sweetener, vanilla, and instant coffee until smooth.
Step 5: Assemble Tiramisu Cookies
Spread or pipe a small amount of filling onto the flat side of one cookie and sandwich with another cookie.
Dust lightly with cocoa powder or sprinkle with chocolate shavings.
