Step 1: Prepare Chocolate Cups

  1. Line a muffin tin with 12 cupcake liners.

  2. Melt chocolate chips and coconut oil in a microwave-safe bowl in 20-second intervals, stirring each time until smooth.

  3. Spoon ~1 tablespoon melted chocolate into each liner, spreading to cover the bottom evenly. Chill in the fridge for 10 minutes.

Step 2: Make Peanut Butter Filling

  1. In a small bowl, mix peanut butter, powdered sugar, and vanilla until smooth and slightly thickened.

  2. Spoon about 1 teaspoon of the peanut butter mixture into each chocolate base, pressing gently but keeping the filling centered.

Step 3: Top with Chocolate

  1. Spoon remaining melted chocolate over the peanut butter, covering completely.

  2. Tap the pan lightly to smooth the tops and remove air bubbles.

  3. Chill in the fridge for at least 30 minutes, or until fully set.

Step 4: Serve

  1. Remove cups from liners.

  2. Optional: sprinkle with sea salt or crushed nuts for extra flavor.

  3. Store in an airtight container in the fridge for up to 1 week.
