Description

Tender carrots and crisp green beans tossed in a sweet and savory honey glaze with garlic and butter. This vibrant side dish is quick, colorful, and perfect for weeknight dinners, holidays, or special gatherings.

For the Vegetables:

1 lb fresh green beans, trimmed
3 large carrots, peeled and sliced into sticks or rounds
2 tablespoons unsalted butter
1 tablespoon olive oil
3 cloves garlic, minced
Salt, to taste
Black pepper, to taste

For the Honey Glaze:

3 tablespoons honey
1 tablespoon soy sauce (optional, for depth)
1 tablespoon balsamic vinegar (optional variation)
½ teaspoon red pepper flakes (optional)

Optional Add-Ins:

½ small onion, thinly sliced
1 tablespoon fresh parsley, chopped (for garnish)
1 teaspoon lemon juice for brightness

Step 1: Prep the Vegetables
Wash and trim green beans. Peel and slice carrots evenly so they cook at the same rate.

Step 2: Blanch (Optional for Extra Tender Veggies)
Bring a pot of salted water to a boil. Add carrots and cook for 3 minutes. Add green beans and cook 2 more minutes. Drain and transfer to ice water to stop cooking. Drain well.

Step 3: Sauté
Heat butter and olive oil in a large skillet over medium heat. Add garlic (and onions if using) and sauté 30 seconds until fragrant.

Add carrots and cook 4–5 minutes. Stir in green beans and cook another 3–4 minutes until crisp-tender.

Step 4: Add the Honey Glaze
In a small bowl, mix honey, soy sauce, and balsamic vinegar (if using). Pour over vegetables and toss to coat. Cook 2–3 minutes until the glaze thickens slightly and coats the vegetables.

 

Step 5: Finish & Serve
Season with salt and pepper. Add a squeeze of lemon juice if desired. Garnish with fresh parsley and serve warm.

Notes

Roasted Version: Toss veggies with oil and roast at 400°F (200°C) for 20–25 minutes, then drizzle with warm honey glaze.
Air Fryer Option: Cook at 375°F (190°C) for 12–15 minutes, shaking halfway, then glaze.
Honey Garlic Upgrade: Add an extra clove of garlic and a teaspoon of Dijon mustard for more depth.
Make It Vegan: Swap butter for plant-based butter or use only olive oil.
Holiday Twist: Add toasted pecans or sliced almonds for crunch.
