Ingredients
1 cup (130g) sweet potato, cubed
4–5 oz (113-142g) lean ground beef
2 tbsp (28g) olive oil
1–2 tbsp taco seasoning (homemade mix of 2 tsp chili powder + 1 tsp cumin)
1/2 cup (145g) small curd cottage cheese
1/2 medium avocado
1–2 tbsp (15-30ml) hot honey
Instructions
Preheat oven to 400°F (200°C)
On parchment-lined baking sheet, toss sweet potato cubes with 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper
Roast for 25 minutes, flipping halfway for even browning
While potatoes roast, heat 1 tbsp olive oil in a skillet over medium heat
Add ground beef and cook, breaking apart with spatula, for 5-7 minutes until browned
Add taco seasoning and 1/4 cup water, stirring until sauce thickens
Arrange roasted sweet potatoes in bowls
Top with beef mixture, cottage cheese, avocado slices, and hot honey
Notes
For extra richness, swirl balsamic glaze with hot honey
Customize spice level with red pepper flakes or extra hot honey
