1 cup Bisquick (or 1 cup all-purpose flour for a scratch version)
1 cup granulated sugar
3 large eggs

1 teaspoon vanilla extract
1/4 teaspoon salt
Optional: 1/2 cup sweetened condensed milk for extra creaminess

Step 1: Preheat & Prep
Preheat oven to 350°F (175°C). Grease a 9-inch pie pan lightly with butter or nonstick spray.
Step 2: Mix Ingredients
In a large bowl, whisk together Bisquick (or flour), sugar, and salt.
Add eggs, milk (or coconut milk), and vanilla extract. Mix until smooth. Stir in shredded coconut and sweetened condensed milk if using.
Step 3: Bake
Pour batter into prepared pie pan. Bake for 50–60 minutes, or until the top is golden and a toothpick inserted comes out mostly clean. The batter will magically separate into a custard layer on the bottom and a cake-like layer on top.
Step 4: Cool & Serve
Allow the pie to cool at room temperature for at least 30 minutes, then refrigerate for 1–2 hours for best slicing. Sprinkle additional shredded coconut or powdered sugar before serving if desired.
