Description

Step 1: Prepare the Dough
Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a bowl, whisk together flour, baking powder, and salt.
In a separate large bowl, cream butter and sugar until pale and fluffy. Beat in the egg and vanilla until smooth.
Gradually mix in the dry ingredients to form a soft dough.

Step 2: Roll & Cut
Lightly flour a surface and roll dough to about ¼-inch thickness.
Cut out rounds using a cookie cutter. In half of the cookies, cut a small heart or circle in the center (these will be the tops).

Step 3: Bake
Place cookies on prepared trays and bake for 10–12 minutes, or until edges are lightly golden.
Cool completely on a wire rack.

Step 4: Assemble the Jammie Dodgers
Spread about 1 teaspoon of jam onto the flat side of each whole cookie.
Top with the cut-out cookies and gently press together.

Step 5: Finish
Dust lightly with powdered sugar and serve.
