¼ cup coconut flour
¼ cup granulated erythritol or preferred keto sweetener
½ cup unsalted butter, melted
1 tsp vanilla extract

For the Caramel Layer:
½ cup unsalted butter
¼ cup heavy cream
⅓ cup brown sugar substitute (like Swerve)
1 tsp vanilla extract
Pinch of salt
For the Chocolate Topping:
½ cup sugar-free chocolate chips
1 tsp coconut oil or butter

Step 1: Prepare the Base
Preheat oven to 350°F (175°C).
In a bowl, combine almond flour, coconut flour, erythritol, and salt.
Mix in melted butter and vanilla until a crumbly dough forms.
Press evenly into a lined 8×8-inch baking pan.
Bake for 12–15 minutes until lightly golden. Cool completely.
Step 2: Make the Caramel
In a saucepan, melt butter over medium heat.
Add heavy cream, sweetener, salt, and vanilla. Stir continuously until thickened, about 5–7 minutes.
Pour over cooled shortbread base and spread evenly. Chill for 20–30 minutes to set.
Step 3: Chocolate Layer
Melt chocolate chips with coconut oil over a double boiler or in 30-second intervals in the microwave, stirring between.
Pour over caramel layer and smooth with a spatula.
Chill in the fridge for 1 hour or until firm.
Step 4: Slice and Serve
Lift from pan using parchment paper.
Slice into bars and store in an airtight container in the fridge.
