For the Mujadara:

1 cup brown or green lentils, rinsed
¾ cup long-grain rice
2 large onions, thinly sliced
4 tablespoons olive oil
1 teaspoon ground cumin
½ teaspoon allspice (optional but traditional)
½ teaspoon black pepper
1 teaspoon salt (adjust to taste)
3 cups water

Optional for Serving:

Plain yogurt
Fresh parsley, chopped
Sliced radishes or cucumber salad

Step 1: Cook Lentils
In a pot, add lentils and 3 cups of water. Bring to a boil, then simmer for about 10–15 minutes until slightly tender but not mushy.

Step 2: Caramelize Onions
While lentils cook, heat olive oil in a large pan over medium heat. Add sliced onions and cook slowly, stirring often, until deeply golden and caramelized (about 20–25 minutes). Remove half the onions and set aside for topping.

Step 3: Add Rice & Spices
To the remaining onions in the pan, add cumin, allspice, black pepper, and salt. Stir well. Add the partially cooked lentils along with some of their cooking water, then add the rice.

Step 4: Simmer
Cover and cook on low heat for 15–20 minutes until the rice is tender and water is absorbed. Avoid stirring too much to keep the texture intact.

Step 5: Rest & Serve
Turn off heat and let the mujadara rest for 5–10 minutes. Fluff gently, then top with the reserved caramelized onions.

  • Onion Tip: Properly caramelized onions are key they should be deep brown, not just lightly sautéed.
  • Rice Option: You can substitute rice with bulgur for a traditional variation.
  • Flavor Boost: A squeeze of lemon juice before serving adds brightness.
