For the Risotto:
1 ½ cups Arborio rice
1 bunch asparagus, trimmed and cut into 1–2 inch pieces
1 small onion, finely chopped
2 cloves garlic, minced
4 cups vegetable or chicken stock, kept warm
½ cup dry white wine
Zest of 1 lemon
Juice of ½ lemon
3 tablespoons unsalted butter
½ cup grated Parmesan cheese
2 tablespoons olive oil
Salt and black pepper to taste

Step 1: Prepare Stock
Warm the stock in a saucepan over low heat. Keep it at a gentle simmer.
Step 2: Cook Asparagus
Heat 1 tablespoon olive oil in a skillet over medium heat. Add asparagus and sauté for 3–4 minutes until tender-crisp. Set aside.
Step 3: Sauté Aromatics
In a large pan, heat 1 tablespoon olive oil and 1 tablespoon butter. Add onion and garlic, cooking until softened and fragrant.
Step 4: Toast Rice
Add Arborio rice and stir for 1–2 minutes until the edges become translucent.
Step 5: Deglaze with Wine
Pour in the white wine and cook until mostly absorbed.
Step 6: Cook Risotto
Add warm stock one ladle at a time, stirring continuously until absorbed before adding more. Continue until rice is creamy and al dente, about 18–20 minutes.
Step 7: Finish Risotto
Stir in sautéed asparagus, remaining butter, Parmesan, lemon zest, and lemon juice. Season with salt and pepper.
Step 8: Serve
Plate immediately, garnishing with extra Parmesan, parsley, and lemon slices if desired.

- Stirring constantly helps release the rice’s natural starch for creaminess.
