For the Sorbet Base:

1 cup fresh lemon juice (about 46 lemons)
1 tablespoon lemon zest
¾1 cup granulated sugar (adjust to taste)
1 cup water
½ cup fresh basil leaves, lightly packed
1 tablespoon light corn syrup or honey (optional, for smoother texture)
Pinch of salt

Step 1: Make the Basil Syrup
In a small saucepan, combine water and sugar. Heat over medium until sugar fully dissolves. Remove from heat, add basil leaves, cover, and steep for 15–20 minutes.

Step 2: Strain & Mix
Strain out the basil leaves, pressing gently to extract flavor. Stir in fresh lemon juice, lemon zest, salt, and optional corn syrup or honey. Chill mixture in the refrigerator for at least 2 hours until completely cold.

Step 3: Churn (Ice Cream Maker Method)
Pour chilled mixture into an ice cream maker (Cuisinart or similar) and churn for 20–25 minutes until it reaches a soft-serve consistency. Transfer to a freezer-safe container and freeze 1–2 hours until firm.

Step 4: Without Ice Cream Maker
Pour mixture into a shallow pan and freeze. Stir vigorously every 30–45 minutes for about 3–4 hours until smooth and frozen.

Step 5: Ninja Creami Method
Freeze mixture in the Ninja Creami container for 24 hours. Process using the “Sorbet” setting. Re-spin if needed for extra creaminess.

Notes

• Use fresh basil only — dried basil will not give the same vibrant flavor.
• Adjust sugar depending on lemon tartness. Taste before freezing.
• For a smoother texture, strain twice to remove pulp.
• Serve in chilled bowls for best presentation.
• Garnish with small basil leaves or thin lemon slices.
