1 cup crushed lemon cookies or vanilla wafers
½ cup sweetened condensed milk
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
½ cup white chocolate, melted (optional but recommended)

For Coating (optional):

½ cup white chocolate, melted
Powdered sugar or shredded coconut for rolling

Step 1: Make the Truffle Mixture
In a medium bowl, combine crushed lemon cookies and lemon zest. Add condensed milk, lemon juice, and melted white chocolate. Mix until a soft, dough-like consistency forms.

Step 2: Chill
Cover the mixture and refrigerate for 30 minutes, or until firm enough to roll.

Step 3: Shape the Truffles
Using a small scoop or spoon, roll the mixture into bite-sized balls and place them on a parchment-lined tray.

Step 4: Coat the Truffles
Dip each truffle into melted white chocolate or roll in powdered sugar or coconut. Return to the tray.
