  • 2 tablespoons honey or brown sugar

  • 1 tablespoon rice vinegar or lemon juice

  • 1 teaspoon fresh ginger, grated

  • 2 cloves garlic, minced

  • 1 teaspoon cornstarch + 2 tablespoons water (optional, for thickening)

For Garnish (Optional):

  • Sesame seeds

  • Chopped green onions

  • Fresh mango cubes

Step 1: Prepare the Sauce
In a small saucepan over medium heat, combine mango puree, soy sauce, honey, rice vinegar, ginger, and garlic. Simmer for 5–7 minutes. If thicker sauce is desired, stir in the cornstarch slurry and cook until glossy. Set aside.

Step 2: Cook the Salmon
Season salmon fillets with salt and pepper. Heat olive oil in a skillet over medium heat. Sear salmon skin-side down for 4–5 minutes, then flip and cook another 3–4 minutes until just cooked through.

Step 3: Glaze the Salmon
Brush or spoon mango teriyaki sauce generously over the salmon. Let it simmer for 1–2 minutes so the glaze caramelizes slightly.

 

Step 4: Serve
Remove from heat and garnish with sesame seeds and green onions. Serve hot with rice or steamed vegetables.

  • Baked Option: Bake salmon at 375°F (190°C) for 12–15 minutes, then brush with sauce.
