For the Soup Base:
2 tablespoons olive oil or unsalted butter
1 medium onion, finely chopped
3 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced
1 teaspoon dried thyme (or 1 tablespoon fresh)
½ teaspoon dried oregano
Salt and pepper, to taste
6 cups chicken broth
For the Chicken & Cream:
2 large chicken breasts or thighs, boneless & skinless
½ cup heavy cream or half-and-half
½ cup grated Parmesan cheese
1 teaspoon lemon juice (optional, for brightness)
Optional Add-ins:
1 cup gnocchi, pasta, or rice
1 cup spinach or kale
Fresh parsley, chopped, for garnish

Step 1: Cook Aromatics
Heat olive oil/butter in a large pot over medium heat. Add onions, carrots, and celery. Sauté 5–7 minutes until softened. Add garlic, thyme, oregano, salt, and pepper; cook 1 more minute.
Step 2: Add Broth & Chicken
Pour in chicken broth and bring to a simmer. Add chicken breasts, cover, and cook 15–20 minutes until chicken is cooked through.
Step 3: Shred Chicken
Remove chicken and shred with two forks. Return shredded chicken to the pot.
Step 4: Cream & Cheese
Reduce heat to low. Stir in cream and Parmesan until melted and smooth. Add lemon juice if desired.
Step 5: Optional Add-ins
If using gnocchi, pasta, rice, or greens, add them now. Simmer until tender (gnocchi/pasta usually 2–5 minutes).
Step 6: Serve
Ladle soup into bowls, garnish with parsley, and sprinkle extra Parmesan if desired.
Notes
- Crockpot Version: Add all ingredients except cream and Parmesan. Cook on low 6–8 hours. Stir in cream and cheese at the end.
- No Pasta Version: Boost veggies or add cauliflower rice for a lighter soup.
- Make Ahead: Soup keeps in fridge 3–4 days. Freeze without cream, add it when reheating.
