Step 1: Prepare the Batter
Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
In a large bowl, whisk sweet rice flour, sugar, matcha powder, baking powder, and salt.
In a separate bowl, mix coconut milk, melted coconut oil, eggs, and vanilla extract until smooth.
Gradually add wet ingredients to dry ingredients, mixing until a thick, smooth batter forms. Fold in chocolate chips if using.
Step 2: Bake
Pour batter into the prepared pan and smooth the top.
Bake for 40–45 minutes, until the edges are set and the center is slightly firm but still chewy. A toothpick should come out mostly clean.
Step 3: Cool & Serve
Allow the matcha brownie mochi to cool completely in the pan to set the mochi texture.
