Ingredients

Scale

🛒 Ingredients (for one 9×5-inch loaf pan):

For the Meatloaf:

  • 2 lbs ground beef (or a mix of beef and pork)

  • 1 cup breadcrumbs

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 2 large eggs

  • ½ cup milk

  • ½ cup grated Parmesan cheese

  • 2 teaspoons Worcestershire sauce

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon dried thyme (optional)

  • 1 teaspoon smoked paprika (optional)

For the Glaze:

  • ½ cup ketchup

  • 2 tablespoons brown sugar

  • 1 teaspoon Dijon mustard

Instructions

📝 Instructions:
Step 1: Prep the Oven & Pan
Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.

Step 2: Mix the Meatloaf
In a large bowl, combine ground meat, breadcrumbs, chopped onion, minced garlic, eggs, milk, Parmesan, Worcestershire sauce, salt, pepper, thyme, and paprika. Mix gently until just combined — avoid overmixing to keep the meatloaf tender.

Step 3: Shape & Glaze
Transfer mixture to the loaf pan and shape into a loaf. In a small bowl, mix ketchup, brown sugar, and Dijon mustard. Spread evenly over the top of the meatloaf.

Step 4: Bake
Bake in the preheated oven for 55–65 minutes, until internal temperature reaches 160°F (71°C). For a caramelized top, broil for 2–3 minutes at the end.

Step 5: Rest & Serve
Remove meatloaf from the oven and let it rest for 10 minutes before slicing. Serve with mashed potatoes, green beans, or your favorite sides.

Notes

  • Make Ahead: Assemble meatloaf a day ahead; cover and refrigerate until ready to bake.

  • Mini Version: Use a muffin tin for individual mini meatloaves; bake 25–30 minutes.

  • Flavor Boost: Add chopped bell peppers or shredded carrots for extra moisture and nutrition.
