For the Bake:

  • 200 g (7 oz) block feta cheese

  • 4 large eggs

  • 1 cup cherry tomatoes, halved

  • 1 cup fresh spinach leaves

  • 2 tablespoons olive oil

  • 1 garlic clove, minced

  • ½ teaspoon dried oregano

  • ½ teaspoon red pepper flakes (optional)

  • Salt and black pepper, to taste

  • Fresh parsley or basil for garnish

Optional for Serving:

  • Toasted bread or warm tortillas

Step 1: Preheat & Prep
Preheat oven to 375°F (190°C). Lightly grease a small baking dish with olive oil.

Step 2: Prepare Veggies
Toss cherry tomatoes, spinach, and garlic with olive oil, oregano, salt, and pepper. Spread evenly in the dish.

Step 3: Add Feta & Eggs
Place the block of feta in the center of the vegetables. Make small wells around the feta and carefully crack eggs into the wells. Sprinkle red pepper flakes if desired.

Step 4: Bake
Bake 12–15 minutes for slightly runny yolks, or 15–18 minutes for firmer eggs. Eggs should be set but still tender.

Step 5: Garnish & Serve
Remove from oven, sprinkle with fresh parsley or basil. Serve immediately on toast, in a tortilla, or enjoy as-is.

Notes

  • Air Fryer Version: Place ingredients in an air fryer-safe dish and cook at 350°F (175°C) for 8–12 minutes.
  • Variations: Swap spinach for kale, add roasted red peppers, or olives for extra Mediterranean flavor.
