Description
These fudgy American brownies use melted butter and dark chocolate to create a rich, crackled top. The hot fat dissolves ingredients evenly, yielding a moist center with crisp edges in under an hour using simple, classic methods.
Ingredients
Unsalted Butter 2 sticks (170g)
Dark Chocolate 2 oz (50g)
Dutch-process Cocoa Powder 3/4 cup (75g)
Brown Sugar 1 1/4 cup (250g)
Granulated Sugar 1/4 cup (50g)
All-purpose Flour 1 1/2 cups (190g)
Salt 1/2 tsp
Baking Powder 1 tsp
Instructions
Melt butter in a microwave-safe bowl in 20-second intervals, stirring until fully melted
Add dark chocolate chips to the melted butter and stir over low heat until smooth
Cool mixture to 85°F (29°C) using an ice water bath if needed
Whisk cocoa powder, brown sugar, and granulated sugar into the melted fat mixture for 30 seconds to create a crackled surface
In a separate bowl, mix flour, salt, and baking powder until well combined
Gradually add dry ingredients to the fat mixture, stirring until just incorporated
Pour batter into a greased or lined 9×13-inch baking dish
Bake at 350°F (180°C) for 25-30 minutes until edges are set
