Mexican sweet buns, known as pan dulce, are soft, fluffy yeast breads topped with a sweet, crumbly sugar crust. The most iconic version, conchas, features a beautiful shell pattern and comes in vanilla or chocolate flavors. These bakery-style buns are perfect with coffee or hot chocolate.

1 cup powdered sugar
½ cup butter or shortening, softened

Step 1: Activate Yeast
In a small bowl, combine warm milk and yeast. Let sit for 5–10 minutes until foamy.
Step 2: Make Dough
In a large bowl, mix flour, sugar, and salt. Add eggs, butter, vanilla, and yeast mixture. Knead for 8–10 minutes until smooth and elastic.
Step 3: First Rise
Place dough in a greased bowl, cover, and let rise in a warm place for 1–2 hours until doubled in size.
Step 4: Shape Buns
Divide dough into 10–12 equal pieces and shape into balls. Place on a lined baking sheet.
Step 5: Prepare Topping
Mix flour, powdered sugar, and butter until a paste forms. Divide and add cocoa powder to half if making chocolate topping.
Step 6: Add Topping
Flatten small portions of topping and place over each dough ball. Use a knife to score a shell-like pattern.
Step 7: Second Rise
Cover and let buns rise again for 30–45 minutes until puffy.
Step 8: Bake
Preheat oven to 350°F (175°C). Bake for 18–22 minutes until lightly golden. Cool before serving.

- For authentic texture, knead until the dough is very soft and stretchy.
