Step 1: Prep Oven & Muffin Pan
Preheat oven to 350°F (175°C). Grease or line a mini muffin pan with paper liners.
Step 2: Mash Bananas
In a medium bowl, mash bananas until smooth. Add egg, melted butter, and sugar/honey; mix until combined.
Step 3: Mix Dry Ingredients
In a separate bowl, whisk flour, baking powder (if using), salt, and cinnamon. Gradually fold dry ingredients into wet mixture until just combined.
Step 4: Fill Muffin Pan
Spoon batter into prepared mini muffin cups, filling about ¾ full. Optionally sprinkle with chocolate chips or nuts.
Step 5: Bake
Bake for 12–15 minutes or until a toothpick comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.
