Step 1: Prepare the Crust
Preheat oven to 325°F (163°C).
In a small bowl, combine graham cracker crumbs, sugar, and melted butter.
Press mixture into the bottom of a greased or lined muffin tin to form individual crusts. Bake 5–7 minutes. Cool slightly.
Step 2: Make the Cheesecake Filling
Beat cream cheese and sugar until smooth and creamy.
Add vanilla and eggs, one at a time, mixing gently after each.
Blend in heavy cream until fully incorporated.
Step 3: Bake Mini Cheesecakes
Pour cheesecake filling over prepared crusts.
Bake for 18–22 minutes, or until edges are set and centers slightly jiggle.
Let cool at room temperature, then refrigerate at least 2 hours.
Step 4: Caramelize the Sugar Topping
Sprinkle 1 teaspoon granulated sugar evenly over each cheesecake.
