Description
Miso Butter Cod is a rich, umami-packed Japanese-inspired seafood dish made with tender black cod coated in a savory-sweet glaze of white miso, butter, and a touch of sugar. Inspired by the famous Nobu miso cod, this version is simple enough to make at home. The fish bakes until perfectly flaky while the miso glaze caramelizes into a delicious golden coating.

1 tablespoon sake (or rice vinegar)
2 tablespoons brown sugar

Instructions
📝 Instructions:
Step 1: Prepare the Miso Marinade
In a medium bowl, whisk together white miso paste, melted butter, mirin, sake, brown sugar, soy sauce, ginger, garlic, and sesame oil until smooth and well combined.
Step 2: Marinate the Cod
Pat the black cod fillets dry with paper towels. Place them in a shallow dish and coat evenly with the miso butter mixture. Cover and refrigerate for at least 30 minutes, or up to 24 hours for deeper flavor.
Step 3: Bake the Cod
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and place the marinated cod fillets on it. Spoon a little extra marinade over the top of each fillet.
Step 4: Cook the Fish
Bake for 10–12 minutes until the fish flakes easily with a fork. For a caramelized top, switch the oven to broil for 1–2 minutes at the end.
Step 5: Garnish and Serve
Remove from oven and sprinkle with sliced green onions and sesame seeds. Serve hot with steamed rice and vegetables.
