1 cup quinoa, rinsed
1 ½ cups water or milk (dairy or plant-based)
2 tablespoons honey or maple syrup

2 cups mixed berries (fresh or frozen: blueberries, raspberries, blackberries)
1 tablespoon honey or maple syrup
1 teaspoon lemon juice
½ teaspoon cinnamon
For the Topping:
½ cup rolled oats
¼ cup almond flour (or all-purpose flour)
¼ cup brown sugar or coconut sugar
2 tablespoons butter or coconut oil, melted
½ teaspoon cinnamon
Optional: ¼ cup chopped nuts (walnuts, pecans, or almonds)

Step 1: Cook Quinoa
In a medium saucepan, combine quinoa, water (or milk), honey, vanilla, and salt. Bring to a boil, then reduce heat and simmer 15 minutes, until quinoa is tender and liquid is absorbed. Remove from heat and fluff with a fork.
Step 2: Prepare Fruit Layer
In a mixing bowl, toss mixed berries with honey, lemon juice, and cinnamon. Spread cooked quinoa evenly in the bottom of a greased 9×9-inch baking pan, then top with the berry mixture.
Step 3: Make Topping
In a small bowl, combine oats, almond flour, sugar, cinnamon, and nuts (if using). Stir in melted butter until crumbly. Sprinkle evenly over the berry layer.
Step 4: Bake Cake
Preheat oven to 350°F (175°C). Bake for 25–30 minutes, until topping is golden and berries are bubbling. Allow to cool slightly before serving.
