Mujadara is a traditional Middle Eastern dish made with lentils, rice, and deeply caramelized onions. 1 cup brown or green lentils
1 cup long-grain rice
3 large onions, thinly sliced
3 tablespoons olive oil

½ teaspoon black pepper
1 teaspoon salt (adjust to taste)
½ teaspoon paprika (optional)

Step 1: Cook the Lentils
Rinse the lentils under cold water. Place them in a pot with about 3 cups of water and cook over medium heat for about 15 minutes until partially tender but not mushy. Drain and set aside.
Step 2: Caramelize the Onions
Heat olive oil in a large skillet over medium heat. Add the sliced onions and cook slowly for 20–25 minutes, stirring occasionally, until deep golden brown and caramelized. Remove about one-third of the onions and set aside for garnish.
Step 3: Add Rice and Spices
Add cumin, coriander, black pepper, paprika, and salt to the skillet with the remaining onions. Stir for about 30 seconds until fragrant.
Step 4: Cook the Mujadara
Add the rice and partially cooked lentils to the skillet. Pour in the water or vegetable broth and bring to a gentle boil. Reduce heat to low, cover, and simmer for 18–20 minutes until the rice is tender and the liquid is absorbed.
Step 5: Rest and Serve
Turn off the heat and let the mujadara rest for about 10 minutes. Fluff gently with a fork. Top with the reserved caramelized onions and fresh parsley.

- Rice Choice: Long-grain rice works best, but basmati can add extra aroma.
