1 can (15 oz) black beans, drained and rinsed
1 can (10 oz) diced tomatoes with green chilies, drained
For the Layers:
6–8 small flour or corn tortillas, cut into strips or rounds
2 cups shredded Mexican cheese blend (cheddar, Monterey Jack, or mozzarella)
½ cup sour cream or Greek yogurt (optional)
For Topping & Garnish:
½ cup chopped fresh cilantro
1 avocado, sliced
½ cup salsa or pico de gallo
Sliced jalapeños or pickled peppers (optional)

Step 1: Preheat Oven
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Step 2: Cook Filling
In a large skillet, cook onion and garlic over medium heat until softened.
Add ground beef or chicken and cook until browned. Drain excess fat if necessary.
Stir in taco seasoning, corn, black beans, and diced tomatoes. Simmer for 5 minutes until well combined.
Step 3: Layer the Casserole
Place a layer of tortilla strips at the bottom of the baking dish.
Spread half of the meat and bean mixture over the tortillas.
Sprinkle with 1 cup of shredded cheese.
Repeat layers with remaining tortillas, meat mixture, and cheese.
Step 4: Bake
Cover casserole with foil and bake for 20 minutes.
Remove foil and bake another 10 minutes until cheese is melted and bubbly.
Step 5: Garnish and Serve
Top with sour cream, salsa, avocado slices, cilantro, and jalapeños if desired.
Serve hot.
