Scale

🛒 Ingredients (serves 4):

For the Chicken & Vegetables:

  • 4 boneless, skinless chicken breasts

  • 1 lb (450 g) baby potatoes, halved or quartered

  • 12 oz (340 g) green beans, trimmed

  • 3 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1 teaspoon paprika

  • Salt and black pepper, to taste

  • 1 tablespoon fresh parsley, chopped (for garnish)

Optional Creamy Mushroom Variation:

  • ½ cup cream of mushroom soup

  • ¼ cup chicken broth

Instructions

📝 Instructions:

Step 1: Preheat & Prep
Preheat oven to 400°F (200°C). Grease a large baking sheet or oven-safe pan with olive oil.

Step 2: Season Chicken & Veggies
In a small bowl, mix garlic, thyme, rosemary, paprika, salt, and pepper with olive oil.
Toss chicken, potatoes, and green beans in the mixture until evenly coated.

Step 3: Arrange on Pan
Place chicken breasts in the center of the pan and arrange potatoes and green beans around them in a single layer.

Step 4: Roast
Bake for 25–30 minutes, turning potatoes halfway through, until chicken reaches an internal temperature of 165°F (74°C) and potatoes are tender.

Step 5: Optional Creamy Mushroom Version
For a creamier dish, whisk together cream of mushroom soup and chicken broth. Pour over chicken and veggies 10 minutes before the end of cooking and return to oven until bubbly.

Step 6: Garnish & Serve
Sprinkle chopped parsley over the chicken and vegetables. Serve hot, straight from the pan.
