For the Truffles:
200 g dark chocolate (70% cocoa), finely chopped
½ cup (120 ml) heavy cream
1 tablespoon unsalted butter
Zest of 1 large orange
1–2 teaspoons orange extract or fresh orange juice
Pinch of salt
For Coating (optional):
Unsweetened cocoa powder
Melted dark chocolate
Finely grated orange zest
Desiccated coconut or chopped nuts

Step 1: Make the Ganache
Place chopped dark chocolate in a heatproof bowl.
In a small saucepan, heat the cream, butter, orange zest, and salt until just steaming (do not boil).
Pour the hot cream over the chocolate and let sit for 2 minutes. Stir until smooth. Mix in orange extract or juice.
Step 2: Chill
Cover the bowl and refrigerate for 1–2 hours, or until the mixture is firm enough to scoop.
Step 3: Shape the Truffles
Using a teaspoon or melon baller, scoop small portions and roll into balls with lightly floured or gloved hands.
Step 4: Coat
Roll truffles in cocoa powder, dip in melted chocolate, or coat with orange zest, coconut, or nuts.
Step 5: Set
Place finished truffles on a lined tray and chill for 15–20 minutes before serving.
