For the Radish Lentil Salad:
1 cup cooked green or brown lentils, cooled
4–5 radishes, thinly sliced
1 small cucumber, diced
2 tablespoons red onion, finely chopped
2 tablespoons fresh parsley, chopped
2 tablespoons olive oil
1 tablespoon red wine vinegar or lemon juice
Salt and pepper, to taste
Optional Add-Ins:
1 teaspoon Dijon mustard for dressing
1 avocado, sliced
A handful of arugula or spinach

Step 1: Prepare Salad
In a bowl, combine lentils, radishes, cucumber, red onion, and parsley.
Whisk together olive oil, vinegar (or lemon juice), salt, pepper, and mustard (if using).
Pour dressing over salad and toss gently. Set aside.
Step 2: Cook Cod
Pat cod fillets dry and season both sides with salt, pepper, and lemon zest.
Heat olive oil in a skillet over medium-high heat.
Add cod and cook 3–4 minutes per side, until golden and flaky. Drizzle with fresh lemon juice before removing from heat.
Step 3: Assemble
Plate the salad and top with the pan-seared cod fillets. Garnish with parsley and additional lemon wedges if desired.
