1 ½ lbs ground chicken
½ cup grated Parmesan cheese
1 cup breadcrumbs (preferably panko)
2 large eggs
2 cloves garlic, minced
½ small onion, finely chopped

½ teaspoon black pepper
½ teaspoon dried Italian herbs (oregano, basil, thyme)
¼ cup milk
For the Topping:
¼ cup grated Parmesan cheese
2 tablespoons ketchup or tomato paste (optional for a glaze)
1 teaspoon olive oil or melted butter

Step 1: Preheat & Prepare Pan
Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease.
Step 2: Mix Meatloaf Ingredients
In a large bowl, combine ground chicken, Parmesan, breadcrumbs, eggs, garlic, onion, salt, pepper, herbs, and milk. Mix until just combined — avoid overmixing to keep the meatloaf tender.
Step 3: Shape & Top Meatloaf
Transfer the mixture to the prepared loaf pan and shape into a loaf. Brush the top lightly with olive oil or melted butter, sprinkle with extra Parmesan, and optionally add a thin layer of ketchup for a glaze.
Step 4: Bake
Bake for 45–50 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden brown. Let it rest for 5–10 minutes before slicing.
