Ingredients
For the Chicken:
2 large chicken breasts, sliced into strips
1 tsp garlic powder
½ tsp onion powder
Salt and black pepper to taste
1 tbsp olive oil
For the Pasta:
8 oz (about 225g) fettuccine or penne
2 tbsp butter
4–5 garlic cloves, minced
1½ cups heavy cream (or half-and-half for a lighter version)
1 cup freshly grated Parmesan cheese
½ cup chicken broth (optional, for thinning sauce)
Salt and pepper to taste
Fresh parsley (optional for garnish)
Instructions
Cook the Pasta:
Boil pasta in salted water until al dente. Reserve ½ cup of pasta water, then drain and set aside.
Season and Cook the Chicken:
In a bowl, toss chicken strips with garlic powder, onion powder, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear chicken until golden brown and cooked through (about 5–6 minutes). Remove and set aside.
Make the Garlic Parmesan Sauce:
In the same skillet, reduce heat to medium. Add butter and minced garlic; sauté until fragrant (about 1 minute).
Pour in the heavy cream and bring to a gentle simmer.
Stir in Parmesan cheese gradually, mixing until smooth and creamy. Add a splash of chicken broth or pasta water if needed to thin the sauce.
Season with salt and pepper to taste.
Combine:
Add the cooked pasta and chicken back to the pan. Toss to coat everything in the sauce.
Let simmer for 2–3 minutes to allow flavors to meld.
Serve:
Garnish with chopped parsley and extra Parmesan cheese.
Serve hot with garlic bread or a simple salad on the side.
Notes
- Pasta Type: Fettuccine, penne, or rotini work best for holding the creamy sauce.
- Cheese Tip: Always use freshly grated Parmesan — pre-shredded cheese often contains anti-caking agents that prevent smooth melting.
- Add Veggies: Try adding spinach, mushrooms, or sun-dried tomatoes for more texture and flavor.
- Make it Lighter: Use half-and-half or evaporated milk in place of heavy cream for a lighter version.
- Storage: Store leftovers in an airtight container for up to 3 days. Reheat with a splash of milk or broth to loosen the sauce.
