Persian Meat and Potato Patties

  • Author: Savannah
  • Total Time: 40 minutes
  • Yield: 10–12 patties

Description

Persian kotlet is a beloved comfort food made with ground meat, grated potatoes, onions, and warm spices. These golden, crispy patties are soft and flavorful on the inside and are often served with fresh herbs, pickles, and flatbread. Perfect for lunch, dinner, or even sandwiches.

Ingredients

🛒 Ingredients (for about 10–12 patties):

For the Kotlet:
1 lb (450 g) ground beef or lamb
2 medium potatoes, peeled and finely grated
1 small onion, finely grated
2 large eggs
3 tablespoons all-purpose flour or breadcrumbs
1 teaspoon turmeric
½ teaspoon black pepper
1 teaspoon salt (adjust to taste)
½ teaspoon paprika (optional)
½ teaspoon garlic powder (optional)

For Frying:
¼ cup vegetable oil (or more as needed)

For Serving (Optional):
Fresh herbs (parsley, mint, basil)
Sliced tomatoes
Pickles
Flatbread (lavash or pita)

Instructions

📝 Instructions:

Step 1: Prepare the Mixture
Grate the potatoes and onion, then squeeze out as much liquid as possible using a clean cloth or your hands. In a large bowl, combine the grated mixture with ground meat, eggs, flour or breadcrumbs, and spices. Mix well until fully combined.

Step 2: Shape the Patties
Take a small handful of the mixture and shape into oval or round patties, about ½ inch thick. Repeat with the remaining mixture.

Step 3: Fry the Kotlet
Heat oil in a large skillet over medium heat. Place patties in the pan without overcrowding. Fry for about 4–5 minutes per side until golden brown and cooked through.

Step 4: Drain and Serve
Transfer the cooked patties to a paper towel-lined plate to remove excess oil. Serve warm with herbs, tomatoes, pickles, and flatbread.

Notes

  • Moisture Control: Always squeeze out excess liquid from potatoes and onions to prevent soggy patties.
  • Crispy Texture: Don’t flip too early let a crust form before turning.
  • Make Ahead: The mixture can be prepared a few hours in advance and kept in the fridge.
  • Variation: Add a pinch of cumin or chopped parsley for extra flavor.
