Description

Ingredients

For the Cookies:
2 ¾ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 ½ cups granulated sugar
1 large egg
1 ½ teaspoons vanilla extract
½ teaspoon almond extract (optional)

For the Filling:
½–¾ cup mini candies (M&Ms, sprinkles, mini chocolate chips, or crushed candy)

For the Icing/Decoration:
2 cups powdered sugar
2–3 tablespoons milk or water
1 teaspoon vanilla extract
Food coloring (various colors)
Sprinkles or edible decorations

Step 1: Prepare Dough
In a bowl, whisk flour, baking powder, and salt. In a separate large bowl, cream butter and sugar until light and fluffy. Beat in the egg, vanilla, and almond extract. Gradually mix in dry ingredients until a soft dough forms.

Step 2: Chill and Roll
Wrap dough and chill for at least 1 hour. Roll out dough on a floured surface to about ¼-inch thickness.

Step 3: Cut Shapes
Cut cookies using round or fun-shaped cutters. For half of the cookies, cut a smaller shape in the center to create a hollow ring (these will form the cavity).

Step 4: Bake
Preheat oven to 350°F (175°C). Place cookies on a lined baking sheet and bake for 8–10 minutes until edges are lightly golden. Cool completely.

Step 5: Assemble Piñata Cookies
Spread a thin layer of icing around the edges of a whole cookie. Place a hollow cookie on top to create a pocket. Fill the center with candy. Seal with another whole cookie on top using icing.

Step 6: Decorate
Decorate the top with colored icing, sprinkles, or patterns. Let icing set before serving.
