½ cup buttermilk
Pink or red food coloring (as needed)

8 oz cream cheese, softened

½ cup heavy whipping cream, whipped to soft peaks

Step 1: Make the Pink Velvet Cake

Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.

In a bowl, whisk flour, cocoa powder, baking powder, and salt.

In a separate bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.

Mix in dry ingredients alternately with buttermilk until smooth. Add pink food coloring to desired shade.

Pour batter into prepared pan and bake for 18–22 minutes, or until a toothpick inserted comes out clean. Cool completely.

Step 2: Prepare Cheesecake Filling

In a bowl, beat cream cheese, sugar, and vanilla until smooth.

Gently fold in whipped cream until light and fluffy. Chill for 15 minutes to firm slightly.

Step 3: Assemble the Bites

Cut the cooled cake into small squares or circles.

Pipe or spoon cheesecake filling on top of each cake piece.

Optional: Add sprinkles, drizzle with white chocolate, or top with strawberries.
