This protein banana bread is perfect for breakfast, post-workout snacks, or a healthy dessert. It can be made with oats, Greek yogurt, or protein powder for a balanced loaf that is both satisfying and flavorful.

Ingredients

Scale

🛒 Ingredients (for one 9-inch loaf):

For the Banana Bread:

3 ripe bananas, mashed
2 large eggs
½ cup Greek yogurt (or dairy-free yogurt for vegan option)
¼ cup maple syrup or honey
1 teaspoon vanilla extract
1 ½ cups oat flour or blended rolled oats
½ cup vanilla or unflavored protein powder
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt

Optional Add-ins:

½ cup dark chocolate chips
¼ cup chopped walnuts or pecans
2 tablespoons peanut butter swirl on top
2 tablespoons chia seeds or flaxseeds

Instructions

📝 Instructions:

Step 1: Preheat Oven
Preheat oven to 350°F (175°C). Line or grease a 9-inch loaf pan with parchment paper.

Step 2: Mix Wet Ingredients
In a large bowl, mash the ripe bananas until smooth. Add eggs, Greek yogurt, maple syrup, and vanilla extract. Whisk until well combined.

Step 3: Combine Dry Ingredients
In another bowl, mix oat flour, protein powder, baking powder, baking soda, cinnamon, and salt.

Step 4: Make the Batter
Gradually add the dry ingredients into the wet mixture and stir until combined. Do not overmix. Fold in chocolate chips or nuts if using.

Step 5: Bake
Pour the batter into the prepared loaf pan. Smooth the top and optionally swirl peanut butter or sprinkle extra chocolate chips.

Bake for 45–55 minutes or until a toothpick inserted in the center comes out clean.

Step 6: Cool and Serve
Allow the bread to cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Oat Flour Option: You can make oat flour by blending rolled oats in a blender until fine.
  • Protein Boost: Use whey or plant-based protein powder depending on dietary preference.
  • Moist Texture Tip: Very ripe bananas help keep the bread naturally moist and sweet.
  • Storage: Store in an airtight container at room temperature for 2 days or refrigerate up to 5 days.
