Step 1: Prepare Crust
Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter until combined. Press firmly into the bottom of a 9-inch springform pan. Bake 8–10 minutes, then cool.
Step 2: Make Filling
Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, cinnamon, and nutmeg. Fold in pumpkin puree until blended. Gently stir in chopped apples.
Step 3: Prepare Crumble
Combine flour, brown sugar, and cinnamon. Cut in cold butter until mixture resembles coarse crumbs. Set aside.
Step 4: Assemble & Bake
Pour filling over cooled crust. Sprinkle crumble evenly on top. Bake 50–60 minutes until edges are set and center slightly jiggles. Cool completely, then refrigerate at least 4 hours or overnight.
