  • 1 teaspoon vanilla extract

  • 1 cup pumpkin puree (canned or fresh)

  • ½ cup milk (dairy or non-dairy)

For the Streusel Topping:

  • ½ cup all-purpose flour

  • ½ cup brown sugar, packed

  • ¼ cup unsalted butter, cold and cubed

  • 1 teaspoon ground cinnamon

  • Pinch of salt

Optional Maple Glaze:

  • ½ cup powdered sugar

  • 2 tablespoons pure maple syrup

  • 12 teaspoons milk

Instructions

📝 Instructions:

Step 1: Preheat Oven & Prepare Pan
Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.

Step 2: Make the Streusel
In a small bowl, combine flour, brown sugar, cinnamon, and salt. Cut in cold butter until mixture resembles coarse crumbs. Set aside.

Step 3: Make the Muffins

  1. In a medium bowl, whisk flour, baking soda, baking powder, salt, and spices.

  2. In a large bowl, mix melted butter and brown sugar until smooth. Beat in eggs, one at a time, then stir in vanilla and pumpkin puree.

  3. Alternately fold in dry ingredients and milk until just combined. Do not overmix.

Step 4: Assemble Muffins
Divide batter evenly into muffin cups. Sprinkle generously with streusel topping.

Step 5: Bake
Bake 20–25 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan 5 minutes, then transfer to a wire rack.

Step 6: Optional Maple Glaze
Mix powdered sugar, maple syrup, and milk until smooth. Drizzle over cooled muffins.

Notes

  • Jumbo Muffins: Fill jumbo muffin cups and bake 5–10 minutes longer.
  • Healthy Swap: Substitute half the flour with whole wheat or oat flour, and use coconut sugar for a healthier option.
  • Make Ahead: Muffins freeze well; reheat in the oven for a fresh-baked taste.
