Step 1: Preheat Oven & Prepare Pan
Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
Step 2: Make the Streusel
In a small bowl, combine flour, brown sugar, cinnamon, and salt. Cut in cold butter until mixture resembles coarse crumbs. Set aside.
Step 3: Make the Muffins
In a medium bowl, whisk flour, baking soda, baking powder, salt, and spices.
In a large bowl, mix melted butter and brown sugar until smooth. Beat in eggs, one at a time, then stir in vanilla and pumpkin puree.
Alternately fold in dry ingredients and milk until just combined. Do not overmix.
Step 4: Assemble Muffins
Divide batter evenly into muffin cups. Sprinkle generously with streusel topping.
Step 5: Bake
Bake 20–25 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan 5 minutes, then transfer to a wire rack.
Step 6: Optional Maple Glaze
Mix powdered sugar, maple syrup, and milk until smooth. Drizzle over cooled muffins.
