Step 1: Prepare Raspberry Filling
If using raspberry puree, blend fresh or frozen raspberries and strain out seeds. Simmer for 5–7 minutes until slightly thickened. Let cool.
If using raspberry preserves, stir until smooth and set aside.
Step 2: Make the Batter
Preheat oven to 425°F (220°C). Grease a muffin tin or line with cupcake liners.
In a microwave-safe bowl, melt butter and chocolate together in 30-second intervals until smooth.
Whisk in sugar, then eggs one at a time. Add vanilla extract.
Fold in flour, cocoa powder, and salt until just combined.
Step 3: Assemble Cupcakes
Fill each cupcake cavity halfway with batter.
Add 1–2 teaspoons raspberry puree or preserves in the center.
Top with remaining batter until just covered.
Step 4: Bake
Bake for 10–12 minutes. Edges should be set, but centers should remain soft and molten.
Cool for 2 minutes, then gently remove from the pan.
