Step 1: Preheat Oven
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 2: Prepare Cream Cheese Filling
In a bowl, mix softened cream cheese, sugar, vanilla extract, and lemon zest until smooth.

Step 3: Assemble Bites
Roll out puff pastry on a lightly floured surface. Cut into 3×3 inch squares. Place 1 tsp cream cheese filling in the center of each square, then top with 2–3 raspberries. Fold corners toward the center or leave open for a tart-like look. Brush with beaten egg.
