In a small bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
Scoop into small balls (about 1 teaspoon each) and freeze for 10–15 minutes.

Step 2: Make Cookie Dough
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk flour, cocoa powder, baking soda, and salt.
In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
Beat in egg, vanilla, and red food coloring until fully combined.
Gradually mix in dry ingredients until dough forms.

Step 3: Assemble Cookies
Take a tablespoon of cookie dough and flatten slightly in your hand.
Place a frozen cheesecake ball in the center and wrap dough around it, sealing completely.
