Description

Tender, caramelized radishes roasted with garlic and olive oil. Roasting transforms radishes from peppery to mildly sweet, making them a versatile side dish that pairs beautifully with meats, grains, or other roasted vegetables.

  • 1 lb (450 g) radishes, trimmed and halved

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • Optional: 1 teaspoon fresh thyme or rosemary

  • Optional: 1 tablespoon butter for extra richness

Step 1: Preheat & Prep
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2: Season Radishes
In a bowl, toss halved radishes with olive oil, minced garlic, salt, pepper, and herbs if using.

Step 3: Roast
Spread radishes in a single layer on the baking sheet. Roast 20–25 minutes, shaking halfway through, until radishes are golden and tender. Optional: toss with butter immediately after roasting for a richer flavor.

 

Step 4: Serve
Serve warm as a side dish with roasted meats, fish, or alongside roasted potatoes and carrots. Garnish with fresh herbs if desired.

Notes

  • Air Fryer Option: Cook at 375°F (190°C) for 12–15 minutes, shaking halfway.
  • Flavor Variations: Add paprika, chili flakes, or lemon zest for extra flavor.
