Description

These Rose & Beet Pink Cookies are soft, fragrant cookies with a naturally beautiful pink color from beet powder or beet puree. For the Cookies:

2 cups all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
½ cup unsalted butter, softened
¾ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1–1½ teaspoons rose water
2 tablespoons beet powder or ¼ cup beet puree (for natural pink color)
12 tablespoons milk (if needed for dough consistency)

Optional Garnish:

2 tablespoons powdered sugar (for dusting)
1 teaspoon dried edible rose petals
1 tablespoon coarse sugar or sanding sugar

Step 1: Prepare the Oven

Preheat oven to 350°F (175°C).
Line a baking sheet with parchment paper.

Step 2: Mix the Dry Ingredients

In a medium bowl, whisk together:

  • flour

  • baking powder

  • salt

  • beet powder (if using powder)

Set aside.

Step 3: Cream Butter and Sugar

In a large bowl, beat butter and sugar until light and fluffy (about 2–3 minutes).

Add:

  • egg

  • vanilla extract

  • rose water

Mix until well combined.

If using beet puree instead of powder, mix it in at this stage.

Step 4: Form the Dough

Gradually add the dry ingredients to the wet mixture.
Mix until a soft dough forms.

If the dough feels dry, add 1–2 tablespoons milk.

Step 5: Shape the Cookies

Roll dough into 1-inch balls and place them on the prepared baking sheet about 2 inches apart.

Gently flatten slightly with your palm or the bottom of a glass.

Optional: sprinkle with rose petals or coarse sugar.

Step 6: Bake

Bake for 10–12 minutes, until the edges are lightly set but centers remain soft.

Remove from oven and allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Step 7: Serve

Once cooled, lightly dust with powdered sugar for a delicate finish.
