  • 1 cup bell peppers, julienned
  • 1 cup carrots, julienned
  • 1 cup mushrooms, sliced
  • 2 cups bok choy or spinach leaves

For the Sauce:

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon fish sauce (for Thai flavor)
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 12 fresh red chilies, sliced (optional for heat)

For Garnish:

  •  2 tablespoons chopped fresh cilantro
  • 1 tablespoon roasted peanuts (optional)
  • Lime wedges (optional)

Step 1: Prepare Noodles
Soak glass noodles in warm water for 10–15 minutes until softened. Drain and set aside.

Step 2: Cook Shrimp
Heat oil in a large skillet or wok over medium-high heat. Add shrimp and cook 2–3 minutes per side until pink and opaque. Remove shrimp and set aside.

Step 3: Stir-Fry Vegetables
In the same pan, add garlic and onions. Sauté until fragrant. Add carrots, bell peppers, and mushrooms, cooking 3–4 minutes until slightly tender. Add bok choy or spinach and stir until wilted.

Step 4: Combine Noodles and Sauce
Add drained glass noodles and cooked shrimp back into the pan. Pour in soy sauce, oyster sauce, fish sauce, sesame oil, sugar, and white pepper. Toss everything gently until evenly coated and heated through.

Step 5: Garnish and Serve
Transfer to a serving dish. Sprinkle with chopped cilantro and roasted peanuts. Serve with lime wedges for an optional tangy kick.
