For the Pasta & Sauce:
12 oz (340 g) fettuccine or your favorite pasta
2 medium beets, roasted or boiled until tender
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil
½ cup unsweetened plant-based cream (or heavy cream for non-vegan)
¼ cup vegetable broth or pasta water
Salt and black pepper, to taste
1 teaspoon lemon juice
Fresh herbs (parsley or basil), for garnish
Optional Add-ins:
2 tablespoons toasted pine nuts or walnuts
¼ cup crumbled feta or vegan cheese

Step 1: Cook Pasta
Boil pasta in salted water according to package instructions until al dente. Reserve ½ cup pasta water and drain.
Step 2: Prepare Beet Sauce
If not already cooked, roast or boil beets until tender, then peel and roughly chop. Blend beets with cream, broth/pasta water, garlic, and lemon juice until smooth. Season lightly with salt and pepper.
Step 3: Sauté Aromatics
In a pan, heat olive oil over medium heat. Sauté onion until translucent, then add garlic for 1 minute.
Step 4: Combine Pasta & Sauce
Add cooked pasta to the pan, pour over beet sauce, and toss to coat evenly. Adjust consistency with reserved pasta water if needed.
Step 5: Serve & Garnish
Plate pasta and garnish with fresh herbs, toasted nuts, or cheese if desired.
