Prepare the Crust:
Preheat oven to 350°F (175°C).
Combine chocolate cookie crumbs and melted butter in a bowl. Press mixture firmly into a 9-inch pie pan.
Bake for 8–10 minutes. Let cool completely before filling.
Make the Mousse:
In a heatproof bowl, melt chocolate and butter over a double boiler or in 30-second microwave bursts, stirring until smooth.
Stir in vanilla extract and let slightly cool.
In a separate bowl, whip 1 cup of heavy cream with sugar until soft peaks form.
Gently fold whipped cream into the cooled chocolate mixture until fully incorporated and airy.
Assemble Pie:
Pour chocolate mousse over cooled crust and smooth the top with a spatula.
Refrigerate for at least 2–3 hours, preferably overnight, until set.
Add Toppings:
Before serving, whip remaining ½ cup heavy cream to soft peaks and pipe or dollop over the mousse.
