2 tbsp granulated sugar
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1 ½ tsp ground cinnamon
1 cup buttermilk (or milk + 1 tbsp vinegar)
1 large egg
2 tbsp melted butter or neutral oil
1 tsp vanilla extract

For the Cinnamon-Sugar Coating:
½ cup granulated sugar
1 ½ tsp ground cinnamon
2 tbsp melted butter (for brushing)

Whipped cream
Warm honey or maple syrup
Dulce de leche
Fresh berries

Step 1: Mix Dry Ingredients
In a large bowl, whisk flour, sugar, baking powder, baking soda, salt, and cinnamon until evenly combined.

Step 2: Combine Wet Ingredients
In another bowl, whisk buttermilk, egg, melted butter, and vanilla. Pour into dry mixture and stir gently until just combined. Do not overmix—small lumps are fine.

Step 3: Cook Pancakes
Heat a lightly greased skillet over medium. Pour ¼ cup batter for each pancake. Cook until bubbles form on top, then flip and cook until golden brown.

Step 4: Coat in Cinnamon Sugar
Mix sugar and cinnamon in a shallow dish. Brush each warm pancake with melted butter, then gently dip or sprinkle both sides with cinnamon sugar for that signature churro crunch.
