Step 1: Prepare Sushi Rice
Rinse rice under cold water until water runs clear. Combine rice and water in a pot, bring to a boil, then simmer covered for 15 minutes. Remove from heat, let sit 10 minutes.
Mix rice vinegar, sugar, and salt; fold into the cooked rice. Let cool slightly.
Step 2: Make Salmon Mixture
In a bowl, combine flaked salmon, mayonnaise, Sriracha, soy sauce, and sesame oil. Mix until well combined. Add sweet chili sauce if desired for a hint of sweetness.
Step 3: Assemble the Bake
Preheat oven to 375°F (190°C).
Spread sushi rice evenly in an 8×8-inch baking dish.
Layer salmon mixture on top of the rice. Sprinkle shredded cheese and green onions over the salmon.
Step 4: Bake
Bake for 15–20 minutes, until cheese is melted and lightly golden.
Step 5: Serve
